Making Pancakes without wheat or flour can be a bit of a hassle, but preparing it without eggs is really hard. You can only imagine the times I retried some of the ingrediants included in this reciep to prepare this dish, and still it wasn’t easy. So when you start preparing the ingrediants and the cooking processes try not to give up becasue it needs some practice to know when exactly to flip this soft textured pancake and how. Once prepared make sure you try it with all sorts of topping cause you deserve it. 🙂

* Note; you can substitute coconut flour with plantain flour but the resulting pancakes will be dark.
Makes 5 pancakes
Ingredients
¼ cup ground chia seeds
½ cup rosewater
¼ cup saffron liquid
1 tsp guar gum or xantham gum
¼ cup coconut flour
2 tbsp. arrowroot flour
1/3 of a cup maple syrup
2 tbsp. apple sauce
1 tsp sea salt
1 tsp baking soda
½ tsp ground cardamom
1 ½ tbsp. coconut oil and a bit to grease the pan
Note: some might like it a bit sweeter, so you either use few drops of your own brew of stevia, or alternatively use few from Sweetleaf liquid stevia.
What to do
Mix the first 4 ingredients and let them gel for at least 5 minutes (if it does not gel add 1 tsp. ground chia seeds)
Mix the remaining ingredients together until you get thick paste dough
Add the gelled chia seeds mix to the dough mix and mix all well
Leave for few minutes to rest
Bring a nonstick pan to heat (very low heat shall be used throughout the cooking because we don’t want them burned)
Pour about ¼ cup of the mixture and round it up with the back of your spoon (the trick is not to spread them big, make them small and a little bit thicker than regular ones)
Leave them for a good 4 – 5 minutes on each side, remember that heat should be on its lowest
Try releasing them from the pan before flipping them, then have a strong heart and flip them quickly 😀
Leave for another 4 minutes then drag them onto your serving plate.
I like the idea of eating this fragrantly sweet pancake with tangerines, oranges or sweet lemons. Just heat some of that fig and dates spread that I made (check my recipe post on Instagram account @caveboy_grubs for that post) and smear a bit of my fig and date spread a bit on top or between layers and savor these exquisite clean and refreshing flavors.

الوصفة هذي هي الطريقة النباتية لعمل البان كيك. عمل البان كيك بدون طحين ممكن يكون سهل الى حد ما لكن عمله من غير بيض! هذا اللي كان صعب خصوصا اني مو مستخدم بدائل البيض النباتيه لأنها تحتوي على الصويا أو طحين الذرة او طحين البطاط .. و هذا اللي يخلي العملية شوي يبيلها صبر لأن النتيجه هي عبارة عن بان كيك لذيذ و صحي جدا يكاد يكون خالي من المواد اللي تسبب حساسيات. اذا ما نفعت من أول مرة كرروها لأنها بالفعل تسوى خصوصا ان مافيها مسكرات بعد.
I love that you are sharing your recipes here! This one is very interesting. I have one question about coconut flour, does it rely on the arrow root flour to become less floppy and more stable? I tried it without as I couldn’t find any at the time and the mixture was spongy and wouldn’t cook all the way through on the grill.

Really sorry for the late reply I just found out that I have two comments which never happens 😅😅 so I’m really excited. Yes arrowroot and tapioca flours have their special properties of manipulating coconut flour and making it either dryer (arrowroot flour) or flexible and fluffy (tapioca flour) but the GI of the later is a bit higher then the other flour and that’s why I use it sparingly 👍 thank you for your comment and participation 🙏
